Υλικά για 44 τεμάχια
- 700γρ. αλεύρι που φουσκώνει μόνο του, Belbake
- 300γρ. βούτυρο ανάλατο, κομμένο σε μικρά κομμάτια, Milbona
- 150γρ. κρυσταλλική ζάχαρη, Belbake
- 2 κ.γ. μπέικιν πάουντερ
- 1 κ.γ. μαχλέπι αλεσμένο
- 2 αυγά
- 3 κ.σ. γάλα, Milbona
- 2 κ.σ. ροδόσταγμα
Για τη γέμιση
- 800γρ. χουρμάδες* χωρίς κουκούτσι, Alesto
- 100γρ. αμύγδαλο, Alesto
- 2 κ.σ. μπράντι, Majestät
- 2 κ.γ. ξύσμα πορτοκαλιού
- 1 κ.γ. κανέλα αλεσμένη, Kania
Για το πασπάλισμα
- Ζάχαρη άχνη, Belbake
Μέθοδος παρασκευής
Για τη γέμιση
Τοποθετήστε όλα τα υλικά σε ένα μπλέντερ και πολτοποιήστε τα.
Για τη ζύμη
- Τοποθετήστε όλα τα υλικά για τη ζύμη στον κάδο του μίξερ και κτυπήστε με το εργαλείο της τάρτας (Κ).
- Αρχικά σε χαμηλή ταχύτητα και ακολούθως στη γρήγορη, ζυμώστε καλά μέχρι να έχετε ένα ομοιογενές ζυμάρι.
- Αφαιρέστε τη ζύμη από τον κάδο και μαζέψτε την με τα χέρια σε μια μπάλα.
- Τυλίξτε τη με πλαστική μεμβράνη και αφήστε να ξεκουραστεί για μισή ώρα.
- Ακολούθως, πλάστε μικρές μπάλες (των 30γρ.), στο σχήμα μικρών κουραμπιέδων.
- Αφού πλάσετε τις μπάλες της ζύμης, πλάστε τη γέμιση με τους χουρμάδες σε πιο μικρές μπάλες ( των 20γρ.).
- Ανοίξτε με την παλάμη σας το μπαλάκι της ζύμης και τοποθετήστε μέσα το μπαλάκι της γέμισης.
- Εσωκλείστε το μπαλάκι της γέμισης και με τις παλάμες σας ξαναπλάστε σωστή τη μπαλίτσα.
- Με ένα πιρούνι χαράξτε (σαν αποτύπωμα) τα μαμούλια ή τοποθετήστε τα στην ειδική ξύλινη φόρμα.
- Προθερμάνετε το φούρνο στους 180 C°.
- Στρώστε σε ένα ταψί λαδόχαρτο και τοποθετήστε τα μαμούλια.
- Ψήστε για 10 λεπτά. Ακολούθως, βγάλτε τα από το φούρνο και αφήστε τα να κρυώσουν.
- Πασπαλίστε με ζάχαρη άχνη.
*Σημείωση: Μπορείτε επίσης να χρησιμοποιήσετε αποξηραμένα δαμάσκηνα, βερίκοκα ή και σύκα.

- 2 tsp baking powder
- 1 tsp ground mahleb
- 2 eggs
- 3 tbsp milk, Milbona
- 2 tbsp rosewater
For the filling
- 800 gr pitted dates*, Alesto
- 100 gr almonds, Alesto
- 2 tbsp brandy, Majestät
- 2 tsp orange zest
- 1 tsp ground cinnamon, Kania
To sprinkle
- Icing sugar, Belbake
Preparation
For the filling
- Put all the ingredients in a blender and puree.
For the dough
- Put all the ingredients for the dough in the bowl of the blender and blend using the cake tool (K).
- Start at a slow speed and gradually increase it, kneading until you have a smooth dough.
- Remove the dough from the bowl and shape it into a ball with your hands.
- Wrap it in cling film and leave to proof for half an hour.
- Then shape the dough into small balls (of 30 gr).
- Once you have shaped the biscuits, shape the date filling into an even smaller ball (of 20 gr).
- Flatten the biscuit ball with the palm of your hand and place the ball with the dates inside.
- Fold the ball up and, with your palms, shape it into a roll again.
- With a fork make an incision (like a print) in the ma’amoul or put them into a special wooden mould.
- Preheat the oven to 180 C°.
- Line a baking tray with greaseproof paper and arrange the ma’amoul on it.
- Bake for 10 minutes. Remove from the oven and leave to cool.
- Sprinkle with icing sugar.
*Note: You can also use dried plums, apricots or figs.
