Ingredients for 4 portions:
For the chicken skewers
- 1 packet chicken skewers, Tou Hasapi
For the sauce
- ½ jar (220 gr) peanut butter, MCENNEDY
- ½ cup coconut cream, Vitasia
- 2 tbsp soy sauce, Vitasia
- 1 tsp lemon zest
For the garnish
- Coriander, finely chopped
Preparation
For the satay sauce:
- Put the peanut butter, coconut cream, soy sauce and lemon zest in a small saucepan.
- Stir the mixture over a medium heat until it is homogenous.
- Separate into 2 portions.
For the chicken skewers
- Preheat the oven to 180°C.
- Brush the skewers with one portion of the satay sauce.
- Line a baking tray with greaseproof paper and place the chicken skewers on it.
- Bake for 15 to 20 minutes.
- Remove from the oven and sprinkle with coriander.
Serve with the remaining satay sauce.
