Ingredients for fish balls
• 450 gr white fish, Trawlic, defrosted and thoroughly strained
• 3 tbsp corn flour
• 1 tbsp soy sauce, Vitasia
• 1 egg, lightly beaten
• 1/2 cup coriander, finely chopped
• 3 tsp curry, Kania
• 100 gr green beans, finely chopped, Green Grocer’s
• 2 spring onions, finely chopped
• ½ cup oil, Vita d’or
Preparation for the fishcakes:
1. In a food processor blend the fish to a paste.
2. Put the fish paste in a large bowl and add the remaining ingredients. Mix thoroughly.
3. With wet hands, shape the fishcakes into small patties. Each fishcake uses about 2 tbsp of the paste.
4. Heat some oil in a pan and fry the fishcakes lightly on both sides.
5. Leave to stand on kitchen paper until ready to serve.
Ingredients for the cucumber relish
• 1 cup vinegar, Pason
• 1 cup sugar, Belbake
• 2 small cucumbers, peeled and thinly sliced
• ¼ cup finely-chopped peanuts, Alesto
• 1 tbsp soy sauce, Vitasia
• 1 tsp finely-chopped ginger
• ½ tsp lemon zest
Preparation for the relish:
1. Put the vinegar and sugar into a small saucepan and boil for 5 minutes or until the sugar has dissolved and the mixture starts to thicken.
2. Remove the pan from the heat, drop the remaining ingredients inside and mix thoroughly.
3. Leave to marinade for approximately half an hour. Then put the relish into a serving bowl.
Ingredients for the chilli sauce
• 1 tsp finely-chopped red chilli pepper, with the seeds
• 3 large red hot chilli peppers, whole
• ¼ cup (60 ml) white vinegar, Pason
• 1 cup (200 gr) granulated sugar, Belbake
• 2 cloves garlic, finely chopped
• ¼ tsp Himalayan salt, Deluxe
Preparation for the chilli sauce:
1. Finely chop the chilli pepper (along with its seeds) – 1 tsp.
2. Slice the other hot chilli peppers in two and remove their seeds.
3. Boil some water in a small saucepan and remove from the flame.
4. Put the peppers into the hot water for approximately 15 minutes (they shouldn’t boil). Then remove them from the hot water and finely chop.
5. Put the finely-chopped hot chilli pepper into a saucepan along with the white vinegar, granulated sugar, garlic and salt, and simmer until the sauce thickens.
